Mexico-inspiration Wedding Feast

o Margarita Salad: fresh crisp greens, tomato, roasted cumin spiced pecans & pickled red onions with a lemon lime Margarita Vinaigrette.
o Mexican Rice: white rice with cilantro & fresh lime juice.
o Roasted Winter Squash: butternut, acorn & Calabaza squash with caramelized onions & Garlic.
o Pan Seared Chicken: Chicken breasts seared to golden brown & baked to perfection. Topped with a smoked Jalapeno cream sauce.
